2 1/2 cups fresh corn kernels (about 5 ears)
3 large eggs
3/4 cup milk
3TBSP melted butter
3/4 cup all purpose flour
3/4 cup yellow cornmeal
1 8oz. package grated mozzarella cheese
2TBSP chopped fresh chives
1tsp salt
1tsp ground pepper
Pluse first 4 ingredients in food processor 3-4 times till corn is coarsely chopped. Stir together flour and next 5 ingredients in large bowl; stir in corn mixture just till dry mix is moistened. Spoon 1/8 cups batter for each cake onto hot, lightly greased griddle to form 2 inch cakes. (do not spread or flatten) Cook cakes 3-4 minutes or till top is covered with bubbles and edges looked cooked. Turn and cook on other side 2-3 minutes.
